Recipe Ingredients
Butter or olive oil
1 12 inch flour tortilla
6 eggs
Cooked ham or bacon if desired
Sea salt and fresh ground black pepper
1 container of your favorite SkinnySalsa
Method
Melt butter or olive oil in a 12 inch pan on med-high heat
Mix eggs in small bowl, add salt and pepper and any cooked ham, sausage, or bacon if desired
Pour eggs into pan
Cook 2-3 minutes until eggs begin to solidify
Place tortilla on top of cooking eggs
Cook 2-3 minutes more and then gently take spatula under the eggs and flip, so the tortilla is on the bottom of pan.
Continue to cook for 2-3 more minutes until eggs are cooked through and tortilla is slightly crispy.
Place on plate or cutting board, use a spoon to spread SkinnySalsa all over the top, cut into sections and enjoy!
