Tortilla Espanola with SkinnySalsa


Tortilla Espanola


Prep and cook time - 10 min


Recipe Ingredients

  • Butter or olive oil

  • 1 12 inch flour tortilla

  • 6 eggs

  • Cooked ham or bacon if desired

  • Sea salt and fresh ground black pepper

  • 1 container of your favorite SkinnySalsa


Method

  1. Melt butter or olive oil in a 12 inch pan on med-high heat

  2. Mix eggs in small bowl, add salt and pepper and any cooked ham, sausage, or bacon if desired

  3. Pour eggs into pan

  4. Cook 2-3 minutes until eggs begin to solidify

  5. Place tortilla on top of cooking eggs

  6. Cook 2-3 minutes more and then gently take spatula under the eggs and flip, so the tortilla is on the bottom of pan.

  7. Continue to cook for 2-3 more minutes until eggs are cooked through and tortilla is slightly crispy.

  8. Place on plate or cutting board, use a spoon to spread SkinnySalsa all over the top, cut into sections and enjoy!
